The V60 provides me with a cup that has a little more concentrated flavour and body that I like. And I can get this with around 14g to 220g water in. The clever by comparison is lighter in body but still tastes really really good. The V60 takes me less time, so I do this one if I get up before the kid as I can be done in 5 minutes and sat with a nice cup of coffee on my own for a few minutes before the chaos. If he's already awake I accept I've lost and use the clever and steep for longer. I am finding I need more like 16-18g in the clever to around 240g of water to get the flavour I liked. I can't be bothered to wait for 40 minutes to steep. I maxed at 20minutes and the coffee produced was naff. I tend to do 18g in 240g water, quite a fine grind, 2 minute steep and drawdown. Brazils are typically not very soluble, not sure I'd grind coarser for a long steep. My long steeps use the finest grinds I use for manual brewing. Nah saya melakukan banyak riset hal-hal apa saja sih yang perlu diketahui dan disiapkan supaya bisa membuat kopi sendiri. Berikut 3 langkah membuat kopi yang saya rangkum: 1. Memilih biji kopi yang tepat. Ada beragam biji kopi berbeda-beda di dunia, namun secara garis besar terbagi jadi 4 varietas utama: Robusta, Arabika, Liberica, dan Excelsa.
MENGENAL PERBEDAAN JENIS EKSTRAKSI Kopi sudah bukan lagi menjadi gaya semata. Saat ini kopi sudah menjadi kebutuhan hidup sebagian orang. Hal tersebut tentunya semakin mendorong para pecinta kopi untuk mempelajari tentang proses penyeduhan kopi untuk dapat menghasilkan secangkir kenikmatan maksimal. Menyeduh kopi atau mengekstraksi kopi bisa dilakukan dengan berbagai cara. Cara yang paling mudah, adalah dengan langsung menyiram air pada kopi yang sudah dimasukkan kedalam gelas. Cara ini lebih populer dengan istilah manual brewing karena proses penyeduhannya lebih didominasi peralatan non-mekanik. Ada beberapa metode yang akan kami bahas kali ini, diantaranya Immersion perendaman Immersion adalah metode ekstraksi kopi dengan cara merendamnya dengan air sehingga terjadi kontak penuh sepanjang proses penyeduhan. Immersion atau rendam adalah metode paling tua dalam mengekstraksi kopi, kalau di Indonesia disebutnya Tubruk. Metode ini termasuk cara paling sederhana untuk menikmati secangkir kopi karena kita hanya membutuhkan air panas dan bubuk kopi. Secara umum dari karakteristik rasa yang didapat dari metode ini akan cenderung lebih strong dan berisi round body. Selain tubruk, ada juga beberapa alat seduh manual yang menggunakan metode immersion, seperti frenchpress, aeropress dan clever dripper. Menyeduh dengan aeropress secara inverted juga menggunakan immersion loh sebelum dibalik dan dipress. Dengan mengetahui metode yang digunakan saat ekstraksi, kita akan lebih mudah dalam mengulik variabel yang lain. Perkolasi Perkolasi adalah teknik membuat larutan dengan cara mengalirkan pelarut, dalam hal ini air, melewati zat zat yang akan dilarutkan, yaitu kopi sehingga menghasilkan sebuah larutan kopi. Mudahnya seperti ini, pada teknik perkolasi, air dialirkan melalui kopi yang sudah digiling. Perkolasi biasa ditemukan pada alat seduh pour over maupun drip, salah satunya seperti alat seduh pada foto diatas, koka dripper namanya. Koka dripper ini salah satu alat yang cukup unik, karena bisa menggunakan tiga jenis kertas filter, filter V60, flat bottom, dan juga wave dripper tentunya dengan hasil seduhan yang berbeda. Hario V60, Chemex, Kalita, Kono, dan dripper-dripper lainnya juga menggunakan teknik perkolasi dalam mengekstraksi kopi. Espresso pun juga sama, hanya saja ditambahkan tekanan atau pressure untuk membantu melarutkan zat-zat yang ada pada kopi. Dekoksi Dekoksi merupakan salah satu teknik ekstraksi yang jarang ditemui dalam menyeduh kopi. Dekoksi sendiri mempunyai beberapa macam pengertian yang berbeda, ada yang mengatakan dekoksi sama dengan immersion akan tetapi diikuti dengan kenaikan suhu, ada juga yang mengatakan dekoksi adalah ekstraksi yang menggunakan tekanan. Dalam buku phytochemical methods dijelaskan tentang arti dekok, yaitu ekstraksi dengan pelarutan air pada temperatur 90oC selama 30 menit. Penguapan ekstrak larutan dilakukan dengan penguap dengan pengurangan tekanan, yaitu rotary evaporator sehingga diperoleh ekstrak yang kental. Dengan berbagai macam pengertian tersebut cara seduh yang masuk kedalamnya antara lain Turkish, mokapot dan juga shyphon. Teknik seduh manual masih akan terus berevolusi. Hal ini bisa dilihat dari semakin beragamnya alat seduh dan cara seduh yang berkembang diantara para penikmat kopi.
